Meanwhile, to whet your appetite for Maia's return, here are a couple of west Cretan dishes that are in season now. Expensive - and not to everyone's taste - but two of our favourite summer dishes ...


Θαλασσινησαλάτα (Thalassinisalata)
Seaweed salad, usually marinated in vinegar and olive oil - crunchy and full of iodine.



Αχινούς (Achinous)
Sea urchin roes, usually served in their own juice with a drop of olive oil and a lemon slice - soft and slippery, with a stronger seawater flavour than oysters.
